Ingredients
Earth Balance buttery spread — 6 tablespoons (3/4 of the stick kind, 3 ounces of the tub kind)
powdered (confectioners) sugar — 3 1/2 cups
cocoa powder — 1/2 cup
vanilla extract — 1 teaspoon
soy milk — 1/4 cup
walnuts (optional) — 1/2 to 1 cup
Instructions
1. Rub a thin coating of margarine in the bottom of a 5x9 loaf pan (if using stick soy buttery spread, use the 1/4 of a stick that's leftover).
2. Place all of the ingredients except the optional walnuts in the upper part of a double boiler (see note below if you don’t have a double boiler). Place the boiler over simmering water and stir until smooth; about five minutes. Add walnuts if desired.
3. Pour the mixture quickly into the loaf pan. Chill thoroughly by putting in the fridge until solid and cut into whatever size pieces you like.

If you don’t have a double boiler (as we don’t), you can just use two different-sized sauce pans. Put water in the bigger of the two pans and get it simmering; then put the ingredients in the smaller pan and put this pan in the bigger one while the water simmers. Be careful not to put too much water in the bigger pan or when you put the smaller one in it, hot water will splash out.
