Ingredients
flour — 1 1/4 cups
sugar — 2 tablespoons
baking powder — 2 teaspoons
salt — 1/2 teaspoon
vegetable oil — 1 tablespoon
soy milk — 3/4 cup
water — 3/4 cup

Instructions
1. In a mixing bowl, mix the first seven ingredients, but not too mixed. (Lumps make the pancakes light.) Preheat frying pan to a fairly high setting and add a splash of oil (in addition to what was used in the batter).
2. Make a hole in the center of the dry ingredients and pour the wet stuff into it. Mix with a spoon until blended — but remember lumps are good because they’re what makes the pancakes light. At this point, you can add blueberries or chopped walnuts or whatever else you like in your pancakes.
3. Pour batter in four-inch circles on the hot, oiled skillet. Heat for about five minutes before flipping. Serve maple syrup on top.
