Pancakes — banana flax

Ingredients

whole wheat flour — 1 1/4 cups

dry sweetener (such as sugar) — 2 tablespoons

baking powder — 2 teaspoons

salt — 1/2 teaspoon

flax seed —1 heaping tablespoon, ground

soy milk — 3/4 cup

water — 3/4 cup

olive oil — 2 tablespoons

extra ripe bananas — 1 or 2 (or even 3), mashed

canola or olive oil for the skillet — a couple of splashes


Instructions

1. Heat up your skillet with a splash or two of oil on it. 


2. In a mixing bowl, mix the dry ingredients. In a small bowl, mix the oil, milk and water and then pour them onto the dry ingredients but don’t mix them yet. In the now-empty small bowl, mash up the bananas with a fork and scrape them into mixing bowl, too. Now mix everything up good. 


3. Pour batter into four- or five-inch circles on the hot skillet. Cook for about 5 minutes on one side and then flip and cook for a few minutes more. Serve with maple syrup on top.
