Ingredients
Soy milk — 1 to 1 1/2 cups (depending on how many slices of bread you use)
Whole wheat flour — 2 tablespoons (any kind of flour will work here)
Nutritional yeast — 1 tablespoon
Raw sugar — 1 teaspoon (any kind of sweetener will work here)
Cinnamon — 1 teaspoon
Stale or thick bread — 6 to 10 slices
Earth Balance spread (any vegan buttery spread is fine)
Instructions
In a bowl that's large and wide enough for soaking the bread, mix everything vigorously (except the bread and margarine!). A whisk works best but a fork will do. Heat your skillet (non-stick preferred) to a pretty high temperature. While it’s heating up, butter the bread on both sides with vegan soy margarine. Soak the buttered bread in the batter. I usually flip it over in the batter on both sides four or five times because the margarine keeps the batter from easily soaking in. Put the soaked bread in the skillet. Let it fry for 4 to 5 minutes (until browned) then flip it over for 3 to 4 more minutes. Serve.
Comments
* This is a good way to use up stale bread.
* We often use a flour that we got for another recipe and are having a hard time getting rid of it. The type of flour used matters little.
* If you’re allergic to yeast, you can use psyllium husks instead of yeast.
